Cauliflower flan

Do you want fresh seasonal vegetables in winter? Choose cauliflower. It is the seasonal vegetable not to be missed at the table. It contains few calories (25 per 100 g) and the beneficial properties for health are indisputable: it has antibacterial, anti-inflammatory, antioxidant, purifying and remineralizing active ingredients. Here is a tasty recipe to prepare on any occasion, the cauliflower flan.

How to make cauliflower flan, the ingredients
400 grams of cauliflower
70 grams of butter
300 ml of milk
1 nutmeg
3 eggs
30 grams of grated Parmesan cheese
30 grams of "00" flour
Fine salt

How to make cauliflower flan, the preparation
First you need to boil the cauliflower fragmented into not too small pieces in salt water. As soon as the water boils, let it cook for another 5 minutes, taking care that the cauliflower don't get too soft, then drain it. In a non-stick pan, if possible, melt 30 grams of butter and brown the previously boiled cauliflower tops, 3 minutes will be enough. Add 150ml of milk and continue cooking for 5 minutes over low heat. Next take the cauliflower and pass it in the blender.

In another pan, melt another 30 grams of butter, add the cauliflower smoothie and finally 20 grams of flour. Stir for two minutes with a wooden spoon and add the remaining 150ml of milk. Keep stirring for about six minutes. At this point the mixture should slowly thicken. With the fire off, add the fine salt, a nutmeg and the Parmesan cheese to the mixture. Stir adding the b├ęchamel and eggs. Transfer the mixture to the molds that you have previously buttered and floured and place them on a high-sided baking sheet filled with cold water. Cook at 180 degrees for 30 minutes in a double boiler.

Here are ready cauliflower flans, you can serve them hot with a cascade of bechamel or with a grating of Parmesan cheese ..
